Koreshe Karafs ( 4 servings )

- Stewing lmb 500g
- Celery 2 bunchs
- Onion 1 medium
- Tomato paste 1/2 spoon
- Mint 100g
- Parsley 100g
- Dried limes 3-4
- Salt 1 teaspoon
- Black Pepper 1/2 teaspoon
- Turmeric 1/2 teaspoon

Finely chop the onions and fry them with oil over medium heat until golden. Cut the meat into 1 inche cubes and add to onions. After two minutes add turmeric,black pepper . Stir well, then after one minute add 2-3 cup of water and bring it to boil. Simmer gently for 1 hour. Wash the celery and cut it into 2 cm length. This stew can be made without mint and parsely. But if you like to use them finely chop the mint and parsley and fry them without oil until wilted. at the end add a little oil and stir for another 2 minutes. Add the celery, dried limes, tomato paste and the other two vegetables to the meat. Simmer for 1-2 hours. Ajust the seasoning and serve with white rice.
