Ghorme Sabzi ( 4-5 servings )

- Boneless stewing lamb 500g
- Kidney beans 3/4 cup
- Onion 1 large size
- Dried limes 4-5
- Spring onions 1 cup
- Spinach 1.5 cup
- Parsley 1/2 cup
- Coriander 1/4 cup
- Garlic chives 1/4 cup
- Fenugreek 1/4 cup
- Salt 1 teaspoon
- Black pepper 1/2 teaspoon
- Turmeric 1 teaspoon

Finely chop the onions and fry them with oil over medium heat until golden. Cut the meat into 1 inche cubes and add to onions. After two minutes add turmeric,black pepper and kidney beans. Stir well, then add 2-3 cup of water and bring it to boil. Simmer gently for 1 hour. All the vegetables should be finely chopped. Add them to the frying pan and fry them ( without oil ) until wilted. Now you can add a little oil to the pan and stir for 2 minutes. When the meat is cooked and is tender add the vegetables,dried limes, salt and simmer for 2-3 hours. Before serving don't forget to adjust the seasoning.Serve it with white rice.
