Gheimeh

Ingredients: ( 3-4 serving )

- Stewing lamb 500g
- Split-peas 150g
- Onions 1 medium size
- Potatos 2 medium size
- Tomato paste 2-3 spoon
- Dried limes 4-5 crushed
- Salt
- Black pepper
- Turmeric

At first you need to soak peas in water for 2-3 hours, then drain out the water.Thinly slice onions, then fry in oil until golden. Wash and cut meat into 1 inche cubes then add to onions. After one minute add black pepper, turmeric and salt. One or two minutes later you can add 2-3 cup of water and bring to boil. Let it boil for almost 1 hour and then add the split-peas , tomato paste and the dried limes. After 1 hour the stew will be ready. Now peel the potatos and cut them french fries style and fry them in oil then set them aside, you will use them at the end. When the stew became ready pour it into the serving boil and decorate it using the french fries. Serve this stew with rice. Before serving don't forget to taste.
