Khoreshe Gheimeh Badenjan ( 4 servings )


Ingredients:
- Stewing lamb 750gr
- Split-peas  250gr
- Eggplants 4-5 thin
- Onions 1medium size
- Potato 2 medium size
- Tomato paste  2-3spoon
- Dried limes 4-5
- Salt, Black pepper, Turmeric


Gheimeh Badenjan Recipe

The directions are the same as in Khoreshe Gheimeh, You have to prepare Khoreshe Gheimeh.  The only difference is that here you should add eggplants to this stew( khoreshe Gheimeh ). So you need to peel the eggplants and slice each one length-wise into two pieces. Add salt to both sides and set them aside for 1-2 hours. Then wash the eggplants and dry them. Fry the eggplant in abundant oil until golden. When Khoreshe Gheimeh became ready add eggplants to it ( just place them over the meat and peas and do not mix). Let it cook for 20 minutes. Serve this stew with rice.
