Kuku Sibzamini ( 4 servings )


Ingredients:
- Potato                   1kg
- Egg                       4-5
- Yoghurt              1/2 cup
- Saffron             1 teaspoon
- Salt                 1 teaspoon
- Black pepper  1/2teaspoon

Cook potatoes in water. Peel them, then grate. Add eggs, yoghurt, salt and black pepper. Mix saffron with 2 spoon of hot water the add to the potatoes. Mix them well. In a non-stick pan pour oil let it be warm over low heat then add the potato mix and flatten it using the back of a spoon. Place the lid on. Cook for about 10 minutes. Then cut radially into 4 equal pieces. Turn them over, place the lid and cook for another ten minutes.
