Kebab Koobideh ( 2 servings )

- Ground lamb & beef 500g
- Onion 1 large
- Egg 1
- Tomato 3-4 large
- salt 1 teaspoon
- Black pepper 1/2 spoon
- Turmeric 1/2 spoon
- Sumac (optional)

Grate the onion and strain it, it must be dry! then add it to meat, also add salt, beaten egg, black pepper, turmeric. Mash them up so that the meat finds a sticky effect. Cover the container and put it in refrigerator for 2 hours.This is the difficult part. Take small amounts of meat (60-80g) and stick it to the skewer well and shape it evenly. Thread the tomatoes on skewers two. Barbecue meat and tomatoes. Be careful to turn the meat frequently and very fast. Both sides of the meat should be cooked together. Otherwise it will fall down. When it became ready take the meat off the skewer using pita (bread). Sprinkle sumac on kebab if you like. This kebob can be served with rice or pita.
