Kebab Barg ( 2 servings )

Ingredients:
- Boneless lamb 1kg
- Olive oil 1/2 cup
- Fresh lime juice 1/4 cup
- Onion 2 large
- Garlic 1 clove
- Tomatoes 4-5 large
- Saffron 1/4 teaspoon
- Salt 1 teaspoon
- Black Pepper 1/2 teaspoon

 

Kebab Barg Recipe
First you need to prepare the marinade. Finley chop the onion and grate garlic. Combine them with olive oil, lime juice, salt and black pepper. Add saffron to 1/5 cup of hot water. Then add it to the marinade. Cut the lamb into long pieces. Thickness should be 1cm and the length should be 15-20cm. Add the lamb to the marinade. Cover the container and marinate for almost 24 hours.
Thread lamb on long skewers and also the tomatoes on another skewer. Brush the lamb with marinade. Barbeque both side, turning frequently. Serve it with rice. This is a delicious Iranian kebab.
