Lasagna Rolls ( 2 serving )

- 5 uncooked lasagna noodles
- Ground lamb 300gr
- Sliced mushroom 300gr
- Onion 1 small
- Mozzarella cheese 200gr
- Tomato paste 1 spoon
- Ketchup sauce

Finely chop onion and fry it in oil. Add ground lamb and mix then add mushroom and after 2-3 minutes add tomato paste and mix well for 2 minutes add half cup of water stir well until it comes to simmer. Let it cook for 20 minutes until the whole water has gone. Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking. Cut each lasagna noodle into halves. Lay out each lasagna noodle on a work surface, then spread about 3 tablespoons of  meat mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down. Put them in the Pyrex sprinkle mozzarella cheese on each lasagna roll. Cover tightly with foil. Bake until heated through about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. The lasagna roll is ready now.
